Why is there no learning map in osdev? I am struggling to learn operating systems, even in the beginning. And I can't start because of that.

Well, what are you looking for? There is the Babystep1 tutorial series. Beyond that, I can really only recommend reading a lot of stuff. Reading documentation for the CPU, and reading source code of operating systems (a lot of them are open source).
