Is MenuetOS 0.86 x86-32 a good thing to look at for inspiration?

That's... well... it's impossible for anyone other than yourself to answer that question. From what I have heard about it, it is a solid enough system for what is for (which is mainly soft real-time control systems, IIUC - I think it can be used for hard RT, but I'm not sure, and in any case hard RT usually only applies to embedded systems), so I doubt it would be a bad choice if that is what you have in mind, but for a general purpose OS, I would be hesitant to say yes.
(Side note: it is important to understand that the crucial aspect of RT is not raw speed, but consistency; people tend to forget that 'real time' doesn't just mean 'before time t', but also 'no sooner than time t′ '. For something like a bottling plant, or more seriously, a nuclear power station or an aircraft's control surfaces, being too fast is as bad as being too slow. Controlling an aileron? hard (must-perform) real time. Controlling a printer's laser sweep? Soft (best-performance) real time. Games and audio players? Not real time at all, since skips in a sound clip or screen tearing in a game aren't something that you need to avoid.)
It all comes down to what you are trying to accomplish. I wish I could give more of an answer, but it really isn't possible, especially without knowing more about what your goals are.
