General Protection Fault after loading IDT and executing sti

Oh, right. I forgot about the whole segment register change validation thing.

Of course, other than push, pop, or mov with FS or GS, (which fall into the specifically using them statement) I can't think of any instructions that implicitly use them, and I don't think GCC or VC++ use them.
