Personally I prefer VMWare because it can run under more OSes but the more virtual machines the better. It keeps me from having to pull out the OSDev test computers from the closet(the gf doesn't like them in the dining room for some reason)

Vmware player cannot create new virtual machines, it can only run them.
Vmware server has the full function set of vmware workstation (including creation of new virtual machines of course). Furthermore, it can run virtual machines as background services, which is its main purpose, AFAIK.

Actually, VMWare Server does not have the full function set of Workstation. If it did, how would VMWare still be able to sell Workstation whilst giving Server away for free?
For example, Server does not support drag-and-drop between a VM and the host.
